They are not the same knives that will cut through a sheepshead fish in a single motion, but they are still sharp and last. These knives have been used for many fish. I think these knives will last as long as I take care of them.

👤I like the Ken Onion Work Sharp. I bought it because I wanted to learn to do it freehand and not ruin my knives. The first knife I tried on the Work Sharp was a brand new Ontario Knives Rat-1, an inexpensive, well-made knife with a pretty AUS-8 finished blade. I was able to make a beautiful mirrored edge in a few minutes. The metal particles that come off the edge during sharpening build up on the angle guides, and I produced a lot of scratches on that pretty AUS-8 finish. You get scratches when you pull the knife through. I don't mind if my knives get damaged. I can't see how defacing them would be possible. It's not necessary. A quick search of the forums confirmed that others have experienced the same problem. I decided to use painters tape on a different knife to protect it. The problem was solved with a perfectly sharp edge in minutes. This method is suggested by other sharpeners like the Apex Edge Pro. It would have been nice if the Work Sharp people did the same. The Work Sharp is a great little machine that is a good price, if you want to try the convex edges. I suggest you read the instructions carefully and taping the sides of your blades. The construction is very solid and can turn the most novice knife sharpener into a pro. If you want to have razor sharp knives on a moment's notice, this will surpass your expectations. The old saying is that a dull knife is more dangerous than a sharp one. A razor sharp blade is not as easy to use as a sharpened blade. After sharpening with this system, be very careful with your knives, they will be scary in a pleasant way. I've picked up a few tips that have helped me sharpen my blades quickly and precisely. I peel masking tape over the edge of the blade to make a silhouette. I put the silhouettes back on and reveal the blade where it will make contact with the belt. This protects the blade while learning how to use it. 2. The real skill is when to let go of the Trigger so that it doesn't grind more on the tip of the blade than the recommended 1 inch per second and maintain proper contact with the belt. 3. It can make a mess, after sharpening 8 or so blades I noticed my dining table was covered in shavings. It was to the right of the sharpener. I put it to the left of the kitchen sink because I wanted to make sure there was no water or something on the counter. This made it easy to clean up the mess. 4. If you're like me and you're wearing eye protection, the left grind shoots debris straight up in your face if the knife is properly inserted and pulled. It would be really bad to get that in your eyes after sharpening your knives. I wish I had a face mask for the first marathon since you will be looking and making excuses to sharpen every blade in the house to make it pass the paper test. 5. The main difference between a pocket knife and a kitchen knife is the angle, since they both use the same main 3 belt grits. I separate my kitchen and pocket knifes and use the same belts for both of them, even if I have a sharpening marathon. The angle degree is the only thing I change. This helps speed up the process by not having to change everything out for each pile. 6. Losing count or what side went in last is the best way to ruin your edge. My method is to use odd numbers on the right side and even numbers on the left side to remember where to start. If it calls for 10 I count to 20 total. I go to the right until I reach 10 and it's a good time to check for burrs. The right side of the system will start at 11. I have yet to notice burrs occurring, thus speeding through the process precisely. I wouldn't have spent the time to write this if I didn't think this Worksharp was good.

The over all 4 star rating is due to its being a bit bulky, but you can't sharpen a serrated edge. For the price, you could add a 5th star for your own purposes.

Since opening the package, I have been able to perform a number of tasks. The first task was to make the paring knives sharper. My initial response was, wow. The edge was very fast and easy to use. The knives are carbon steel, but the pivot pro really made quick work of the group. The knives were very sharp with no more than a right pass on the cutter and three on the ceramic. This is a huge plus because they cut on dinner plates quickly. I had to sharpen our knives at the Firehouse. At first, I was only going to do a few, but at the end, I sharpened all of them because it was so easy. Who is this sharpener for? I would say everyone. I collect knives and some of them will only besharpened by a certain method. I have used the Work Sharp Ken Onion edition with the blade grinding attachment before and it works great. It's usually a small event setting it up and working through the different grits. The pivot pro is dirty and down, so it gets done quickly. The kitchen drawer, shop, the truck, or wherever you need a quick razor edge, the sharpener is perfect.

If you don't pay attention to what you're doing, the sharpening angles won't work, and you can damage a blade if you put too much pressure on it. I used some sharpening oil on a cloth to clean the blades before sharpening them, and noticed that the blades weren't so rough after using the oil.

I had other knives that were dull but not useless, and I ran them through the 2nd and 3rd stages and they are back to normal. Very nice. If you haven't done it before, you'll ruin the edge of a couple of knives, and this works and I will likely use it with some regularity. I got pretty good at it, but it's just a pain. If you've never used a stone, you can learn to grind a knife in 2 minutes, but you won't get that nice polished edge from this grinder. This works, it's easy, and the blade is sharp, could the edge be sharper? This works.

I am very happy that I did. The machine made quick work of dull, round, nicked up blades that were so dull I could see them without fear of a scratch. I started with the stage 2 slots. I didn't want my knives to be ground down quickly. This was enough to reedge the knives and then a few passes through stage three, followed by a series of passes on a ceramic hone, and I was the owner of sharp knives. Make sure you hold the blade steady with little down pressure and a constant rate of draw to get the best results. To finish off the edge, follow the directions and have a hone or steel. This machine is a great addition to my kitchen and I would not hesitate to buy it again. I ran my knives through the stage 3 a few times, hit those with my ceramic hone, and marveled at how much sharper the blade was. If you're not sure if the machine is worth the money, or if you're not sure if it will work, stop now and order it. It is very good. If you want to enjoy the new edge on your old blades, you should get this machine, it will save you hours of work and allow you to wet grind all of your knives.

👤I know what I'm talking about and I'm not just expressing my opinion as a "knife guy", I sell and work on knives for a living. I picked this up because I have tried many pull throughs, including the most popular one on Amazon. If you can believe it, this little guy is better than either Lansky or Smith's current basic offerings. I shaved my inner left arm after I used it to sharpen a filter. It only took about 5 minutes, and it looks like it will be set at a 20 angle on both coarse and fine options. I haven't tried using the ferro rod combo, so I can't say for sure. The whistle works well, my beagle agrees. If you're looking for a good pull through that won't chew up your blade, I would recommend it. Good value for money too.
👤I've been a subscriber to the fixed angle sharpeners for a long time. I gave stones an honest shot, without oil, with water, different angles, and different strokes. I tried everything. It took forever and never left me with the sharpness I wanted. For me, the carbides are just plain work, not refined enough for some, but a brute force tactic. I'm ready to go after I get a sharp blade. They can easily oversharpen and take off too much metal if you want to make a blade that's not dull yet. The secondary fine edge sharpener built into this one will solve the problem. This one has a rounded diamond sharpener. The whistle and firestarter are just icing on the cake. The tool has a lot of functions. I was a bit skeptical but I'm glad I got it. I ordered their Multipurpose Sharpening tool on Amazon, which is high quality and has a fine honing edge that is made of carbide as well, which should be great for sharpening levels in between the ceramic and the rough carbide. The only negative I can think of is that it doesn't have rubber strips or feet to hold it on a flat surface while sharpening, but I never did that with my carbide sharpeners in the past. I held the knife in one hand and the sharpener in the other. The edge of this one is not flat, so you can still set it down.

I tried different methods after that didn't work, and didn't get any better results. Hard pressure seemed to make no difference. I tried a different angle out of frustration, but it didn't make a difference. I spent over 30 minutes on one knife pulling it through and it did nothing but tear up my knife blade. I have had better luck with knives on the bottom of a mug. You can use the mug for two things, unlike this item. The firestarter is easy to get stuck in the holding slot if you push it in all the way. It is very difficult to get back out. The whistle was the only thing that worked. This item was beyond disappointing and I usually don't leave 1 star reviews. It felt like a rip off.
